I think this is going a bit too far. Beauty and the Beast is set in France - why not have french actors? Dick Whittington, the Emperor/Emperess of Morocco isn't Moroccan! Jack and the Beanstalk... the Giant isn't a 10ft performer! Nor the cow is a real cow... it's theatre, it's make-believe, it's tradition... There are ethnically diverse casts of Aladdin and other pantomime productions across the country every year, and I can see where you're coming from, as there is more awareness of these issues. However, as Aladdin is one of (if not, THE) most popular and well-known pantomimes, I don't know how it can be done in a PC way without being removed or changed completely. The same can be said about gender issues. Is the pantomime dame to be stopped because of PC? I don't think audiences would like that. Best short-term solution? Avoid China or asian based jokes that could cause offence, including names (although we might see some productions moving the 'Peking' setting to 'Wuhan'...). There's not always a reference of Aladdin really being Chinese... I always used to think as a little boy that the Twankey family came to China from England, and that's why they spoke English so well! Abanazar usually comes from Egypt, would that require special casting too? If this issue must be tackled, a longer-term solution would be to do it the way Disney did their production... setting it in a fictional town of (like theirs is Agrabah), so it's not geographically or culturally set anywhere. They, therefore, managed to bring a multicultural cast together, including 'white' people, to create a cohesive show.
