When I read that it sounded exhorbitant, but on thinking I used to try to work in 5 vegetables every day (35) and 2-3 frutis (14-21) so, no that is not a real reach when you cut out the processsed foods and meats and replace them with vegetables and fruit. On top of that I would get fish/seafood and poultry in. If you replace that with nuts, beans/legumes, seeds, quinoa and tofu for protein it would make perfect sense. I would just have to really do some research and keep up with what I was eating in order to have enough protein on a plant baseed diet but it can be done. Check out Forks Over Knives. It is a plant based diet and they have a lot of ideas, suggestions and recipes. A nephew lost over 100 pounds while following it to get rid of body wide inflammation. He was a meat and potatoes guy but he got in the habit and enjoyed it, especially in summer when gardens are in.
