I am glad that you are embracing and enjoying eating more plant-based foods. I love quinoa, but one word of warning. It is somewhat like plain rice; it doesn't have a distinct taste of its own and instead takes on and enhances the flavor of the food it is paired with. It is even great as a breakfast "pudding" paired with fruits. Go for it!
