Gluten-Free Scones (from Delishably)
Ingredients:
12 oz (≈340 g / 1.5 cups) gluten-free self-raising flour (e.g., Doves Farm)
2 level teaspoons xanthan gum (omit if your flour blend already contains it)
1 level teaspoon salt
4 tablespoons caster sugar
4 oz (115 g / ˝ cup) unsalted butter
2 eggs
4–6 fl oz milk (start with 4 fl-oz and add if needed)
Method (summary):
Preheat oven to 220 °C (fan) or 230 °C (conventional).
Mix dry ingredients (flour, xanthan gum, salt, sugar).
Rub in butter until breadcrumb-like.
Whisk Eggs in a separate bowl then gradually stir in 2 to 3 oz of milk
Make a well in the centre of the dry mix and gradually add the egg and milk mixing to a soft dough with a spoon— add more milk only if needed.
Let rest ~5 min, then roll/cut or drop by scoop.
Brush with egg/milk wash and bake ~10–12 min until golden.
Serve with butter, jam, or cream.
