Tracey’s scone recipe! Posted by KP on 14/2/2026, 11:54:57 In Feb/March 2023 you put a post up with a link to a recipe on Delishably for a recipe for gf scones for me. They were the best scones I’ve ever made. Saved the link and also on Pinterest. Just went to make a batch this morning and the links have disappeared and the recipe is also no longer on the website. I wondered if you could post the actual recipe please. Shows me not to rely on links to recipes always being there. I shall write it out next time (that’s if I can get it) 🙃 Thanking you in yummy anticipation!

I tried a scone at our local Blue Diamond garden centre the other day, disaster, I wasn't too optimistic when I saw it, but decided to have a go and very carefully sliced it in half, crumbling to pieces, made the best of it with jam and cream. Now our local Blue Diamond makes some delicious cakes on site including flourless options and they seem to sell a huge quantity of 'normal' ones but they need to think again on the GF ones. It can be done with commercially made ones, M&S ones are pretty good. Bill D.

I asked ChatGPT to find the recipe and it has, amazingly from a memory, whatever that means. I have a printed copy and have checked it against the recipe below and the ingredients are all the same, the method was slightly different so I have added more info to that. Gluten-Free Scones (from Delishably) Ingredients: 12 oz (≈340 g / 1.5 cups) gluten-free self-raising flour (e.g., Doves Farm) 2 level teaspoons xanthan gum (omit if your flour blend already contains it) 1 level teaspoon salt 4 tablespoons caster sugar 4 oz (115 g / ½ cup) unsalted butter 2 eggs 4–6 fl oz milk (start with 4 fl-oz and add if needed) Method (summary): Preheat oven to 220 °C (fan) or 230 °C (conventional). Mix dry ingredients (flour, xanthan gum, salt, sugar). Rub in butter until breadcrumb-like. Whisk Eggs in a separate bowl then gradually stir in 2 to 3 oz of milk Make a well in the centre of the dry mix and gradually add the egg and milk mixing to a soft dough with a spoon— add more milk only if needed. Let rest ~5 min, then roll/cut or drop by scoop. Brush with egg/milk wash and bake ~10–12 min until golden. Serve with butter, jam, or cream.

I've got a recipe that tastes nice, but even with using self raising flour and baking powder they don't rise like my scones did before we had to change to using gluten free products.

Hi Geraldine I used to add more baking powder to mine, 2 tsp in one batch as well as the self raising flour and yes they did rise. Remember to whisk the eggs separately so they are well beaten and frothy as this could help add air and help the rise. I also used sultanas which I soaked in water for at least a few hours or overnight and drained before adding so they were really plump. I used to really enjoy them with a thick layer of butter.
